Graduation

My littler sister graduated from high school a few days ago, and we had her family graduation party yesterday.  We were all instructed to bring a dish to share.  I offered pasta salad.  Pasta salad has always intimidated me; not sure why, but it has.  So I made it from a box.  Make the pasta and mix the seasoning with mayo and milk.  Easy.  Really easy.
My goal for this week:  Make real pasta salad, as in, not from a box.  I'm looking up recipes, but would like some input.
What are your favorite pasta salad recipes?

    My mom makes a delicious tortellini pasta salad. Some stores carry dried tortellini and that's the cheapest. You can also someimes find it frozen or fresh pasta in the refrigerator isle. Cook cheese tortellini according to the instructions is comes with. Drain the hot water off and rinse with cold water to cool the pasta. Chop up some onions, tomatoes, bell peppers, carrots, peas, broccoli. Use whatever combination of veggies sound good to you. Pour enough italian dressing over pasta and veggies to coat everything. Stir well. Serve chilled. This keeps well in the fridge, but may need more dressing if it sits because the pasta soaks some of it up. Stir before adding dressing to make sure it hasn't all just settled to the bottom. Enjoy!

  2. Our family favorite is a kicked up version of Suddenly Salad Bacon Ranch, but since that won't work for you, another option is my Ramen pasta salad, just omit the bacon. It doesn't have a name, I never figured one out!

    4 packs chicken ramen
    2 tomatoes, diced
    3 ears sweet corn, cooked & cut off ears
    4 slices bacon, drained & chopped
    2 T. ranch dressing
    2 T. Parmesan cheese

    Break up the ramen noodles & cook as directed. Drain and rinse with cold water. Sprinkle the seasoning packets on the noodles and incorporate the remaining ingredients. Top with Parmesan cheese. Mega - yum - yum!

    Today for Jay's end of school picnic I also just made a super simple gluten free pasta salad. Just cooked rice noodles per directions and coated with a Blush Wine dressing. It's really yummy and as simple as simple could be. I omitted veggies because of all the allergy possibilities, but it would be great with veggies added too.
