'Tis The Season

After I wrote the post about DIY holiday food gifts, I felt lazy and decided I would make time to make some of my own gifts this year.  So here's what I came up with:

Chocolate Spoons

These are very easy to make and can be used with coffee or hot milk to make hot chocolate.  
You will need:
Plastic spoons; I bought mine at the dollar store, don't spend a lot of money on spoons
chocolate; I buy the chocolate from the candy make supply aisle at the craft store, it melts really well
sprinkles for decorating

Get Started:
1.  Melt the chocolate in the microwave according to directions on chocolate bag.  
2.  Lay out the plastic spoons on a tray lined with wax paper.  
3.  Spoon the melted chocolate into the plastic spoons. 
4.  Add the sprinkles for decorations, then place in fridge to set, about 15 minutes.  
5.  That's it, enjoy!  


Chocolate Peanut Butter Cornflake Cookies
There are no bake cookies and are super easy to do.  

Ingredients: 
cornflakes 
chocolate, candy making chocolate from craft store
peanut butter
sprinkles for decorating

Start Cooking:
1.  Melt chocolate and peanut butter in the microwave.  Stir in cornflakes, until they are well coated.  
2.  Spoon onto a tray lined with wax paper.  Decorate with the sprinkles and put in the fridge to set up, about 15 minutes.  
3.  Eat and enjoy!

DIY Holiday Food Gifts

First off, sorry for the lack of posts the past week.  With the Christmas holiday coming up, I have been very busy.  I am also moving in 2 weeks and haven't started pack(nuts, I know).  Then my MacBook Pro died.  It was a very sad day in my apartment.  But I took it to the Genius Bar at the local Apple Store and they brought my baby back to life :)

This year I had wanted to do homemade food gifts for all my friends and family.  Well, with moving soon and work and life, I haven't gotten around to it yet.  So I will just share my homemade food gift ideas with you.  Hopefully I get around to it next year :)

Candy Cane Vodka : Sounds amazing, right?  I haven't tried it yet, but I believe it is going to be nothing less than amazing.  I did no come up with the recipe, click on the link for the original post.  Basically you put cheap vodka in a mason jar, add sugar candy(candy canes for holiday season), let sit for 2 days.  Then you have flavored vodka!  You can also make cute labels or tags to dress up the jar for to give as a gift.

Cookie Trays:  Ok, so everyone gives cookies this time of year.  But I think it is a fun thing to do.  I give cookies to co workers, office staff, and neighbors.  I make classic spritz cookies with my cookie press.  I will also add fudge to the cookie try, or other simple cookies if I have time to make them.

Ingredients: 
3 sticks butter softened
1 cup sugar
1 egg
1 tsp vanilla extract
3 1/2 cups flour
colored sugar

Start Cooking: 
1.  Pre heat oven to 375 degrees.  
2.  Beat butter and sugar on medium speed, until creamy.  Add egg and vanilla, beat well.  Add flour and mix on a low speed.  
3.  Put dough into cookie press and press the cookies onto a cookie sheet.  Sprinkle with colored sugar and bake 10-12 minutes.  Cool for 2 minutes on cookie sheet and then transfer to wire rack to cool completely.  

S'mores Kits:  
I cannot take credit for this one... I got the idea from Essen, a recreational cooking school in Lancaster PA.  I believe I have blogged about my experiences with Essen before.  But I will say it again: I love the classes and I always learn a lot of great new things.  Today I went to a make your own holiday food gift class.  We learned how to make homemade marshmallows and we got the idea to make a s'mores kit with them.  You could also make chocolate bark or chocolate spread to go with the kit.  Make your own gram crackers, or used store bought ones.  I am not a big fan of marshmallows, but these homemade ones were really great.  I will post Essen's marshmallow recipe here.  And I also encourage you to take a class with them, you won't regret it.

Ingredients: 
3 packages unflavored gelatin
1 1/2 cups granulated sugar
3/4 cups light corn syrup
1/4 cup honey
1/4 teaspoon kosher salt
1 tablespoon vanilla extract
confectioner's sugar, for dusting

Start Cooking: 
1.  Combine the gelatin and 1/2 cup cold water in the bowl of an electric mixer fitted with the whisk attachment and allow to sit while you make the syrup.
2.  Meanwhile, combine the sugar, corn syrup, homey, salt and 1/2 cup water in a small saucepan and cook over medium heat until the sugar dissolves.  Raise the heat to high and cook until the syrup reaches 240 degrees on a candy thermometer.  Remove from heat.  
3.  With the mixer on a low speed, slowly pour the sugar syrup into the dissolved gelatin.  Put the mixer on high speed and whip until the mixture is very thick, about 15 minutes(yes, it really does take that long).  Add the vanilla and mix. 
4.  With a sieve, generously dust an 11 x 7 inch baking dish with confectioners sugar.  Pour marshmallow mixture into the pan, smooth top, and dust with more sugar.  Allow to stand uncovered 2-3 hours, or over night. 
5.  Turn the marshmallows onto a board and cut them in squares.  Dust them with more sugar(so the sides are not sticky).

Pumpkin Cookies

Ok, so I really love pumpkin.  But I don't like pumpkin pie, it's too mushy.  I also love chocolate.  At a bake sale a few years ago I tried pumpkin chocolate chip cookies for the first time and they were amazing.  Not sure why I waited until now to try making them for myself.   Yes, pumpkin is normally a fall food.  But I figured since we are having warm weather here, why not make some pumpkin treats in december?  I browsed a bunch of websites and cook books and found a recipe that I liked online.  I added a few things to it though.  I will post my version of the recipe here.  Warning: this recipe makes a TON of cookies.

Ingredients: 
4 cups all purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon pumpkin pice spice
1 teaspoon salt
1 can(15 or 16 ounce) pumpkin
1 cup vegetable oil
2 eggs
2 tablespoons milk
2 tablespoons vanilla extract
2 cups chocolate chips

Start Cooking: 
1.  Heat over to 375 degrees.  Line baking sheets with parchment paper.
2.  Put all ingredients, except chocolate chips, in a large bowl and mix on medium speed until well blended.  Fold in chocolate chips.

3.  Spoon cookies onto baking sheets.  Bake for about 12-13 minutes, until edges begin to brown.

4.  Cool for a minute on the baking sheet then transfer to wire rack to finish cooling.  Store in air tight container.  

Tips and Hints:
1.  Do not over bake; the cookies will turn out dry and hard(icky).  
2.  Why line the baking sheets with parchment paper?  The cookies will not stick and it makes clean up easier.

Easy Stromboli

We all know that I love Italian food.  I also love simple easy cooking.  I was browsing Pinterest and found a recipe for stromboli.  It looked really yummy and easy to make, but I didn't like all the ingredients they used.  So I made my own version.  The best thing about this recipe is that you can add whatever ingredients you want.  I will give you the ingredients that I used, feel free to adjust as you like.

Ingredients:
vegetable oil
1 medium, chopped
1 green pepper, chopped
Italian seasoning
traditional spaghetti sauce
shredded mozzarella cheese
refrigerated pizza dough, in the tube

Start Cooking:
1.  Pre heat oven to 350 degrees.  Line cookie sheet with parchment paper.
2.  Roll out pizza dough into a large rectangle and place on cookie sheet.
3.  In a medium sauce pan, heat the oil and Italian seasoning.  Add the onions and peppers and cook until they are tender.
4.  Spread a thin layer of spaghetti sauce on the middle of the pizza dough.  Layer the onions and peppers on top of the sauce.  Then layer the cheese, topping it off with a little more sauce.

5.  Fold over the sides of the dough, covering up all the toppings.
6.  Bake until the dough is cooked, about 20 minutes.
7.  Let stand for 5-10 minutes before cutting.  If you cut it before, the cheese and everything will run out.
